Kellie Culver, Office Administrator  
Kellie is a graduate of the University of Kentucky and comes to us with a background in marketing as well as Food & Beverage.  Kellie spent years working in management roles with one of the top restaurant groups in Atlanta.  During that time she managed the wine and beverage programs, hired and trained employees and was responsible for monthly P&Ls as well as building customer relations.

Natacha Drummer, Customer Service Manager

Natacha  joined AMI Inflight in Santa Monica in June in the position of Customer Service Manager. She comes to us with an extensive background in food service  and import administration.  

AMI WinesCustomer Service 

Ebru Dikis, Customer Service Coordinator 
 Ebru Dikis works out of our Santa Monica office as well. . Ebru started working for AMI Wines in June.  She will be taking on the role of Customer Service Coordinator and will be working closely with Parissa Safavi in the wine division.

One of the newest additions to the AMI wines portfolio is
Stuhlmuller Vineyards , a family owned winery in the Alexander Valley

At the beginning of 2014 Thierry Leduc, Chairman of AMI, reflected on the success of his team. This led him to think about what the core values of the company are. He came up with 9 of these core values and combined them with some of his favorite quotes. He then commissioned artist Gildas Coudrais to design the images that would properly express them. The values are rooted in humility. Being humble and passionate about what we do is the foundation of AMI's success.  Throughout 2015, AMI will be sharing these values in upcoming newsletters.

Crispy Asian Salmon Purses with Korean Mayo

Korean chili mayonnaise with preserved lemon 
-10g Jansal Valley Korean pot aged chili paste
-40g Duke's Mayonnaise
-2g Shichimi Togarashi (My Spice Sage)
-2g Jansal Valley preserved lemons - finely diced
Crispy Gravlax salmon purse with Soy caviar 
-5 ea Jansal Valley Wonton Wrapper
-150g Woodsmoke Asian Gravlax salmon (cured with Ginger, -Lemongrass, Cilantro)
-5 - 7g Domaine de Provence Soy Pearls
-2g diced micro green onions - for garnish
-2g Shichimi Togarashi (My Spice Sage)
-20g organic young mesculin greens - for garnish
Organic grapeseed oil for frying

Preheat Grapeseed oil to 375f
Lightly deep fry wonton skins one at a time in grapeseed oil until crisp, dust with Togarashi spice on both sides and set on wire rack to cool. Utilize two skins per purse for a thicker skin. (20 seconds in oil)
Finely dice Woodsmoke Asian gravlax salmon and cool to proper HACCP holding temperature, add 30g to each crispy wonton shell.
Add 5-7 ea soy pearls to salmon and wonton purse
top with micro green onion as garnish
To make Chili Mayo:
Remove all liquid from preserved lemon peel, finely dice.
Combine all ingredients and mix thoroughly.
